Pasta e Fagioli (Pasta and Beans) Recipe

Small tube pasta
1 can of kidney or mixed beans
1 can of tomatoes
Celery
1 small piece of garlic
2 tablespoons of vegetable oil
½ teaspoon of salt
½ teaspoon of black pepper

Directions for Sauce:

Place garlic in saucepan with vegetable oil. Heat until garlic roasts. Remove garlic. Strain tomatoes from the can and pour into saucepan. Add salt, pepper and celery. Simmer sauce for 40 minutes.

Directions for Pasta:

As sauce is simmering, cook the pasta in a large pot. Strain the pasta when ready. Rinse the beans from the can and add to the pasta in the strainer. Place the pasta and beans in the large pot. When the sauce is ready, add the sauce to the pasta and beans and heat for 5 minutes on low heat, stirring occasionally. Serve immediately.
